For this week’s Chill Companion, we tried two authentic concoctions from Mauri’s cocktail menu: the Plymouth Punch and the Sparkling Cucumber with Mint

In Nepal, bartending is still regarded as a man’s preserve. Sabita KC, however, is proving that gender is no barrier when it comes to perfecting the art of mixing drinks. Initially a barista at Illy, KC started developing an interest in mixology after joining Mauri, where she has now been a bartender for four months. She believes that bartending is all about continually learning: even after mastering the essentials of bartending, you have to keep working on coming up with new drinks, maintaining standards and improving your service and how you present your creations.

Secret to making a good drink: Making a good drink requires that a bartender be thoroughly invested in the process: you need to carry out every step with the utmost care; you need to use just the right ingredients, of just the right amount; the bar needs to be exceedingly hygienic; and you need to execute every procedure with extreme precision.

KC’s mixology chops

For this week’s Chill Companion, we tried two authentic concoctions from Mauri’s cocktail menu: the Plymouth Punch and the Sparkling Cucumber with Mint. For the coral-tinged Plymouth Punch, KC mixed some Bombay Sapphire gin, guava juice, lemon and ice, and vigorously shook the mix in a cocktail shaker, before garnishing it with mint leaves and a single disk of orange. The fruity flavours from the juices blended seamlessly with the rich tones of the gin, to make for a nice summery flavour. The Sparkling Cucumber with Mint—made by mixing lemon juice, vodka, sliced cucumbers and a final drizzle of tonic water—was a blast of freshness. The crisp taste of the cucumber and the subtle acidity of the lemon provided a nice punch to this simple refreshing drink.

Ingredients
Plymouth Punch

60ml Bombay Sapphire Gin
90ml guava juice
10ml lemon juice
Ice for topping

Sparkling Cucumber with Mint

10ml lemon juice
60ml vodka
60ml tonic water
Thinly sliced cucumber
Sliced lemon (for garnish)
