For this week’s Chill Companion segment, Amulya Rana Magar concocted two fruity and energising drinks: Strawberry Hennessy Island and Christmas Special

Amulya Rana Magar has been working at The Old House as a bartender for the past five years. He had no formal mixology training prior to his employment, and he picked up his bartending chops on the job. As someone who loves to be creative, Amulya was attracted to bartending after he came to know of the endless combinations of drinks he could concoct. After two years of practice and learning, he became the head bartender at The Old House, in 2014. Despite not having any formal training, he believes that his experience has taught him more than enough to be able to devise a mean cocktail.

Magar’s take on bartending

Magar believes that bartending is more than just drinks and cocktails; it’s also about having patience and perseverance. He says that making a good drink requires constant practice so that the bartender can master the skill of combining various flavours. More than anything else, Magar believes that the key to running a successful bar is communication, so that the bartender knows the customers’ exact preference.

Magar’s mixology philosophy

Magar has only one motto when it comes to making drinks: don’t rush. Making a good drink requires time; the measurements have to be exact and the mixture has to be combined properly, because even a small mistake can completely change the taste of a drink. He also emphasises that presentation is key. The appearance of a drink is the first thing people notice, and sometimes, a lacklustre appearance can ruin the overall drinking experience for the customer.

Magar’s mixology chops

For this week’s Chill Companion segment, Magar concocted two fruity and energising drinks: Strawberry Hennessy Island and Christmas Special. These drinks have been introduced specially for Christmas and New Year. To make Strawberry Hennessy Island, Magar poured Grenadine liqueur into a glass, put in ice cubes and strawberry slices, and finally poured a mixture of strawberry-infused rum, Triple Sec, Peach Schnapps and lime juice. He finally topped up the drink with Hennessy VSOP.

For the Christmas Special, he shook the ingredients—strawberries, vanilla extract, lemon juice, and sugar syrup—with ice in a cocktail shaker, and poured the blend into a champagne glass before topping it up with sparkling wine. The drink was garnished with a rose carved out of a strawberry. Both these tangy drinks make for perfect party cocktails.


Strawberry Henessy Island

  • Grenadine liqueur
  • Ice Strawberry slices
  • 15 ml strawberry-infused rum
  • 15 ml peach schnapps
  • 15 ml triple sec
  • 15 ml lime juice
  • 30 ml Hennessy VSOP topping

Strawberry Christmas Special

  • Blend 6-8 strawberries, 1 teaspoon of vanilla extract, 15 ml lemon juice, 15 ml sugar syrup
  • Top up with sparkling wine
