For this week’s Ruslan Chill Companion, Kaviraj Phuyal prepares an exquisite refreshing drink called Phi Phi Beach

Kaviraj Phuyal has been working at Mango Chilli for the past eight months. He has a natural flair for mixing drinks. He has not gone through any formal mixology training; rather, he picked up his bartending skills on the job.

Phuyal’s mixology philosophy

The secret behind Phuyal’s bartending skills is his ability to make judgements on flavours and mix them accordingly to create exquisite drinks. He feels a bar is the backbone of a restaurant, and drinks complement the entire dining experience; hence thinks it’s imperative that a bartender be focused while mixing drinks. 

Phuyal believes that the presentation of and the manner in which a drink is offered are as important as a drink’s taste. And, he says, it’s important that a bartender always try to get customer response and feedback—that’s how you keep honing your skills.

Phuyal’s mixology chops

For this week’s Ruslan Chill Companion, Phuyal prepared an exquisite refreshing drink called Phi Phi Beach. This vibrant drink has many flavours and colours that symbolise things to do with Thailand—the Blue Curacao represents blue skies and blue seas, and the Grenadine represents the beautiful sunset seen from the sandy beaches of Thailand. The drink also includes Ruslan Vodka, Malibu rum, lemon juice and a few ice cubes and a garnish of three pineapple slices. 


15ml Ruslan Vodka
20ml Malibu Rum
20ml Blue Curacao
20ml Grenadine
15ml lemon
20ml sugar syrup
3 slices of pineapple
Few ice cubes
